valencia’s ancient refresher

What are tigernuts (chufas) may you ask? Well to one’s surprise, they’re not actually nuts, but ancient, edible tubers from the plant Yellow Nutsedge. They’re grown in the agricultural region of Alboraya in Valencia, a fertile region by the Spanish Mediterranean coast that has been growing food since the times of the Roman Empire!

These tigernuts are organic and valued for their mildly sweet nutty taste, health benefits and powerful source of nutrition. Soaked, ground, and sweetened tiger nuts can be made into horchata, a refreshing dairy-free beverage.
